This recipe comes from The Organised Housewife who I absolutely love. She has some amazing ideas to help inspire all of us. I came across this recipe and knew it would be a lunch box smash hit and it certainly was. The best part is I made a big batch then popped them in the freezer and they lasted for weeks. Brilliant!!! I have also added yoghurt to mine as I always find this helps to keep them moist and stay fresher a little longer. Eb x
- 180g ripe bananas
- 4 weetbix
- 140g skim milk
- 2 eggs
- 80g butter or oil
- 240g SR Flour
- 50g sugar
- 50g low fat greek yoghurt
- 100g choc chips
Preheat oven to 180deg.
Add weetbix, flour and sugar to the bowl and mix on Speed 6 for 10 seconds. SET ASIDE
Add milk, bananas, yoghurt, butter/oil and eggs to the bowl and mix on Speed 5 for 10 seconds.
Add flour and choc chips to wet mix and set to Closed Lid, Interval for 12 seconds.
Spoon into muffin cups/tray and bake for 15-20 minutes.
