Who doesn't love fresh tomatoes on some toasted bread? We have been very lucky to get some home grown tomatoes from our neighbours this year and there is no way they are going to waste. This is a superb way to use up not only tomatoes but some ciabatta loaf I had left over.
To make this little marvel here is what I did.

Slice your tomatoes into your preferred shape, thinly slice a quarter of a red onion and place in a bowl. Add 1-2 tbsp balsamic vinegar, 1-2 tbsp olive oil, good pinch of salt and pepper and some fresh basil leaves. Toss together and leave until ready to use. (Note, how many tomatoes you use will depend on how much you are making!)
Slice into portions and use a pastry brush to coat in olive oil. Cut a garlic clove in half and rub onto the bread. Heat a pan (I used a grill pan) to hot and toast your bread.
Place handfuls of the tomatoes onto your bread and top with your favourite feta (I love Persian Feta). You could also add some toasted pine nuts as well.
Whether as a starter or as a main, this is a big bite of deliciousness and so easy to make.
