So clearly I love sweet potato and chick peas!! Actually I had picked up some sweet potato last week at the markets and was determined to use them up, hence the flurry of recipes. These were a perfect side to our chicken and salad and enjoyed by everyone. Eb x
- 500g sweet potato peeled and diced
- 500g water
- 1 large garlic clove
- 400g tin of chick peas rinsed and drained
- 60g cous cous
- 1 tsp garam masala
- 1 egg
- Olive oil
- Breadcrumbs (optional)
- Coriander and mango chutney to garnish
Add water to the bowl and insert simmering basket. Add sweet potato and cook for 15 minutes at Varoma Speed 2. When cooked, remove the sweet potato and drain the water.
Add the garlic to the bowl and chop on Speed 7 for 3 seconds. Scrape down the sides. Add the sweet potato and chickpeas and mash on Speed 4 until well combined (approx. 30 seconds)
Add cous cous and garam masala and set blades to Speed 4 then add the egg through the MC hole. Mix for 20 seconds. Scrape down sides and repeat if necessary.
Set mix aside to cool. When cool enough to handle roll into patties and roll in some breadcrumbs (optional).
Heat some oil in a frypan and gently fry for a few minutes on each side until crunchy.
