Another Mexican triumph!! We are always eating Mexican foods but I don't want to be eating tacos or your basic chilli con carne recipe all the time. This is another absolute winner that can be served with tortillas, corn chips, rice, veggies, salad, in a pie, in a gozleme or dare I say ... chuck it on a pizza (yep I said it!) Devoured by all in my house so I hope your family enjoys it too. Eb x
- 1 onion, peeled and halved
- 1 large garlic clove
- 120g chorizo skin removed and quartered
- 10g coriander stems/roots
- 1 red capsicum diced
- 30g olive oil
- 2-3 tbsp Mexican Spice Mix (ThermOMG recipe)
- 800g gravy beef diced into big chunks
- 400g tin tomatoes
- 10g maple syrup
- 1 cinnamon stick
- 60g tomato paste
- 60g Vegetable stock paste
- Can kidney beans rinsed and drained
- Coriander to garnish
Add onion, garlic, chorizo and coriander to the bowl and chop on Speed 6 for 3 seconds. Scrape down the sides
Add capsicum and oil and sauté for 5 minutes at Varoma Reverse Speed 1.
Add beef and spice mix and mix on Reverse Speed 2 for 10 seconds.
Add remaining ingredients EXCEPT beans and cook for 45 minutes at 100deg Reverse Speed 1.
Add beans and check for seasoning, cook for a further 15 minutes at Varoma Reverse Speed 1.
