Moroccan Lamb Bake

So the photo is TOTALLY not doing this one justice!  This was given the thumbs up by everyone tonight.  I used some Heart Smart Lamb Steaks I picked up from Woolies and I was a little nervous they might be a bit dry but nope, they were so moist and delicious and of course easily turned into mince using the Thermomix.  Very happy with this little winner.  Eb x

  • 700g lamb steaks diced
  • 20g coriander leaves and stalk
  • 2-4 spring onions roughly chopped
  • 40g bread crumbs
  • 1 onion peeled and halved
  • 1 large garlic clove peeled
  • 30g olive oil
  • Heaped tsp paprika and ground cumin
  • ½ tsp ground cinnamon
  • 1/8 tsp cayenne pepper
  • 50g Vegetable Stock Paste
  • 50g tomato paste
  • 800g fresh tomatoes, core removed and quartered (you could use tinned)
  • Salt and pepper to taste

Add coriander and spring onions to the bowl and chop on Speed 7 for 2 seconds

Add half the lamb and Turbo for 2 seconds.  Repeat 2-3 times.  Set aside in a separate bowl. 

Add remaining half of lamb and Turbo for 2 seconds, repeat 2-3 times

Place all the minced lamb into the bowl, add breadcrumbs and mix on Speed 5 for 10 seconds.

Roll into balls and lay in a casserole dish.  Set aside.

Add onion and garlic to the bowl and chop on Speed 5 for 2 seconds.  Add spices and oil and saute for 5 minutes at Varoma Speed 1.

Add stock, paste and tomatoes and cook for 15 minutes at 100deg Speed 2.  When done you can blitz on speed 5 to get desired consistency.

Pour over the lamb and place in the oven at 180deg and bake for 30 minutes.  Note you could also add some chickpeas to the mix.

I served this with a cous cous salad (toasted pine nuts, toasted chickpeas, spinach, cherry tomatoes and cous cous) and a simple yoghurt dressing.
