Yep I said it, zucchini cheese!!! What I love about being Thermomix Consultant is meeting new people at various events and talking food. I met a lady last night who mentioned zucchini cheese and my ears pricked up!! So I immediately googled a recipe, found one and converted it. And guess what ........ it tastes like cheese!!! Ok so I will always be a true cheese lover but if you are vegan or dairy free this would be a fantastic alternative. I grilled some on bread and it became even more cheesy. Love that you can create such things! Eb x
- 500g water
- 200g zucchini roughly chopped
- 5g lemon juice
- 10g coconut oil
- 1 ½ tbsp gelatine or ¾ tsp agar powder
- 1 tbsp nutritional yeast
- Good pinch salt
Lay baking paper in a slice pan.
Add water to the bowl, insert your simmering basket and place zucchini in. Steam for 8 minutes at 100deg Speed 4.
When cooked remove the basket and empty the water. Place the zucchini in the bowl add lemon and oil and blitz on Speed 8 for 20 seconds. Scrape down the sides and blitz again at Speed 6 for 20 seconds.
Add gelatine, salt and yeast and mix on Speed 6 for 20 seconds.
Pour into pan and place in fridge until set.
