Carrot Cookies for the Pooches

Cracks me up how similar dogs can be to kids!!!  Yesterday (to celebrate 2 years since we rescued our dogs) I decided to make them something different to the Peanut Butter Cookies they normally enjoy.  Because they love carrots I thought maybe some carrot cookies.  Well!!!!  When I first gave it to them, they took it from me, dropped it on the floor and gave me a look as much to say "what the heck is this???".  So I urged them to "just eat it!" at which point he took a small nibble only to discover he actually likes it and inhaled the rest of it then came begging for more! I do love my boys to bits.  Hope your fur babies enjoy these ones too.  Eb x

  • 300g raw carrot roughly chopped
  • 150g plain flour (or wholemeal flour)
  • 150g spelt flour
  • 100g rolled oats
  • 2 eggs
  • 50g olive oil

Preheat oven to 170deg and prepared 2 baking trays with baking paper.

Add carrot to the bowl and grate on Speed 6 for 3 seconds.  Scrape down the sides.

Add the flour and oats and mix on Reverse Speed 5 for 5 seconds.

Add eggs and oil and mix on Reverse Speed 5 for 5 seconds (using the spatula to help)

Using a teaspoon, scoop out the mix onto a lined baking tray and flatten slightly with a fork.

Bake for 20-25 minutes or until firm.
