We used to be big fans of the packaged Fajita kits but of course have not had them in years once we knew better! This is my take on a dish we loved and it goes without saying it is so much nicer when you do it yourself. Loaded with flavour and the corn salsa worked so well with it. This is a super easy meal to make and also have prepared ahead of time so you only need to pan fry the steak and you are done. Enjoy. Eb x
- 500-700g rump steak
- 35g soy sauce
- 45g lime juice
- 1 tsp cumin seeds
- 45g olive oil
- 25g brown sugar
- 1 red chilli
- 5g garlic cloves
- 25g coriander roots/stems
Add all ingredients except the beef into the bowl and blitz on Speed 8 for 20 seconds. Pour over the steak and set aside for 6-8 hours to marinade.
When ready, pan fry your steak. Allow to rest before slicing.
- 3 fresh corn cobs
- 3 medium tomatoes, diced
- ¼ red onion, diced
- 1 jarred roasted red capsicum, diced
- Handful fresh coriander leaves, chopped
- Juice of 1 lime
- Good pinch of salt
- Good pinch of cracked pepper
- Drizzle of olive oil
I rubbed olive oil into the corn then air fried for 20 minutes. Alternatively you could BBQ or microwave the corn or keep raw. Holding the corn upright, use a knife to cut the corn off the cob.
Add all ingredients together in a bowl and toss through.
You could also add some feta and avocado.
Serve the above with tortillas.
