My gorgeous mother in law always used to make goulash for her 3 boys with leftover lamb and it's something that husband loved. After making my beautiful big lamb roast on the weekend I had heaps left over and there was no way it was going to waste. All that marinated lamb just added to the flavour of this dish. Definitely a great way to use up leftovers. Eb x
- 1 large onion peeled and halved
- 1 large garlic clove
- Potatoes diced (peeling is optional)
- 400g tin tomatoes
- 300g water
- 80g tomato paste
- 50g TMX stock paste
- Tsp paprika (smoked or sweet – your choice)
- Tsp Marjoram
- 1 bay leaf
- Leftover lamb roast roughly chopped
- Fetta to serve (optional)
Add onion and garlic to the bowl and chop on Speed 7 for 3 seconds. Add 20g oil and saute for 5 minutes at 100deg Speed 1.
Add tomatoes, paste, stock, water, paprika, bay leaf and marjoram to the bowl. Add the diced potatoes to the steaming basket and insert inside the TMX bowl. Cook for 20-25 minutes at 100deg Reverse Speed 1.5. Check the potatoes are cooked and remove them from the bowl and place in Thermoserver.
Add the lamb to the bowl and cook for 3 minutes at 100deg Reverse Soft Speed just to warm them through. Add to potatoes and gently combine together.
Serve with fetta and fresh bread.
