Chicken and Bacon Meatballs with Tomato and Basil Pasta Sauce

I am clearly loving my chicken balls but when its so easy to make why wouldn't you.  This is another simple flavours dinner but when you serve it with fresh homemade pasta you really don't need to over complicate the rest of the dish.  Making your own pasta is incredibly easy and so worth that little bit of extra effort.  You can pick up a pasta machine for less than $50 and you will be wondering (like me) why you waited so long to try it.  Enjoy.   • 100g breadcrumbs
  • 30g parmesan Cheese grated
  • 2 spring onions chopped
  • Handful of basil
  • 600g chicken breast or thighs diced
  • 4 bacon rashers diced small


  • 1 red onion peeled and halved
  • 1 garlic clove
  • 30g fresh basil
  • 70g TMX stock paste
  • 100g sun dried tomatoes sliced
  • 50g tomato paste
  • 400g tin tomatoes
  • 150g water

Add breadcrumbs and cheese to a bowl.

Add onions and basil to the TMX bowl and chop on Speed 7 for 3 seconds. Add chicken and press turbo for 2 secs and repeat until minced to your desired consistency.  Note:  I added 400g first and did turbo twice, then added remaining 200g and did turbo 3 times.

Add bacon into the chicken and mix on Reverse Speed 4 until combined.  Roll into balls and coat with breadcrumbs. Set aside until you are ready to make the sauce.  These can be made ahead of time and kept in the fridge.

Preheat oven to 180deg.

Place chicken on a baking tray and drizzle with oil.

Meanwhile into a clean bowl add onion, garlic and basil.  Chop on Speed 5 for 3 seconds.  Add remaining sauce ingredients and cook for 20 mins at 100deg Reverse Speed 1.  While sauce is cooking place chicken into the oven and bake for 15-20 minutes or until done.

Place your sauce into your Thermoserver and cook your pasta - I used fresh homemade pasta so it only took 3 minutes to cook.  Toss your pasta through the sauce and plonk the meatballs on top.

For best result serve with fresh homemade pasta and garnish with feta or parmesan cheese.
