Such a stunning biccy to have with your cuppa and you make it to whatever flavour you like. This is an old fashioned winner that everyone loves. Enjoy. Eb x

- 120g butter (chopped)
- 110g plain flour
- 50g icing sugar
- 50g cornflour
- 1 tsp vanilla bean paste (or extract)
Preheat oven to 160deg and line a baking tray.
Insert butterfly and add butter to the bowl. Mix on Speed 4 for 10 seconds. Remove butterfly and add remaining ingredients. Set to Closed Lid – Interval (wheat) for 20 seconds. Scrape down the sides and repeat for 5 seconds or until the dough comes together.
Roll into small balls then press lightly with a fork. Place into oven and bake for 15mins or until lightly golden.
Once cooled fill them with ganache, or buttercream icing.
I used 50g butter, 200g icing sugar, pulp of 1 passionfruit and mixed with Butterfly on Speed 4 until smooth consistency.
You could use cocoa, vanilla, lemon or strawberry jam for flavouring.
