Spanish Meatballs

Just delightful, these Spanish Meatballs are so full of flavour! Bek x

  • 500g Mince (pork or beef or a mixture of both!)
  • 3 slices bread
  • ½ small bunch coriander
  • 1tsp garlic salt
  • 1 red onion peeled and cut in half
  • 2 cloves garlic
  • 10g olive oil
  • 400g tinned tomatoes
  • 1tbsp tomato paste
  • 1 tsp TMX vege stock concentrate
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tbs jalapeno’s (pickled jar variety) or 1 red chilli
  • 1 tsp ground black pepper
  • 1tbsp sliced black olives (optional)
  • Grated cheese and extra coriander to serve

Place bread, coriander and garlic salt into TMX bowl and blitz for 6 seconds speed 7

Add mince and mix for about 1 minute reverse speed 2 until combined.  Roll mixture into balls and place in TMX basket

Add garlic, onions and jalapenos to clean bowl and chop for 5 seconds speed 6. Add olive oil and sauté for 2 minutes 100 degrees speed 1

Add remainder of ingredients except olives and cheese to bowl.  Place basket with meatballs above sauce.  Cook at 100 degrees for 45 minutes speed 1. 

This can be served now with olives or you can pour into baking dish, top with grated cheese and place under grill until brown
