- 170g plain flour
- 200g rolled oats
- 1 tsp baking powder
- Pinch of salt
- 70g roasted cashews
- 100g coconut oil
- 70g brown sugar
- 50g caster sugar
- 20g maple syrup
- 1 tsp vanilla paste
- 1 egg
- 1 banana (100g)
Preheat oven to 160deg and line 2 baking trays with baking paper
Add flour, baking powder, salt and oats to the bowl and mix on Reverse Speed 4 for 5 seconds. SET ASIDE
Add cashews and coconut oil to the bowl and mix on Speed 7 for 5 seconds. Scrape down the sides and repeat.
Add sugars and mix on Speed 5 for 5 seconds.
Add banana, egg, maple syrup and vanilla and mix on Speed 5 for 5 seconds.
Add flour and oats and mix on Reverse Speed 4 for 10 seconds.
Place spoonfuls of the mix on the tray and flatten slightly. Add some choc chips (optional)
Bake for 10-12 minutes or until golden.
