Quinoa Protein Bars

  • 120g almonds
  • 100g uncooked quinoa
  • 100g chia seeds
  • 50g linseeds
  • 100g oats
  • 30g coconut
  • 150g peanuts
  • 20g rice bran oil
  • 170g maple syrup
  • 1tsp cinnamon
  • 1tsp cardamom powder
  • 1tsp vanilla
  • 70g dried fruit of choice

Preheat oven to 200.

Add almonds to the bowl and mill at Speed 6 for 3 seconds.  Weigh into the bowl the quinoa, chia seeds, linseeds, oats and coconut.  Tip onto baking tray and toast for 5-10minutes.

While they are toasting add peanuts into bowl and grind on speed 9 adding rice bran oil to blend. (You can use shop peanut butter but it's so easy to make your own).

Add maple syrup. And cook at 100 deg for 4 minutes Speed 2. 
Add spices and vanilla plus your toasted seeds and nuts along with dried fruit and mix on Speed 6 for 20 seconds.  Use you spatula if necessary.

Spread into pan and push down. Refrigerate and enjoy
