What a winner of a dish. I know the photo is not doing it justice but this was enjoyed by all tonight. A quick, easy chicken dinner served with mash potato and baby carrots. Might have to add this to the regular menu! Enjoy. Eb x
- 1 eschallot or onion (peeled and halved)
- 1 large garlic clove
- 3 sprigs of rosemary leaves
- 20g olive oil
- 150g dried figs
- ½ cup brandy
- 6 chicken thighs (trimmed and cut in thirds)
- Juice of 1 orange
- 50g Chicken stock paste (or vegetable stock)
- Salt and pepper to taste
Place figs and brandy in a bowl and set aside for approx. 1-2 hours.
Add onion, rosemary and garlic to bowl and chop on Speed 5 for 3 seconds. Add oil and sauté for 4 minutes at Varoma Speed 1 (MC off).
Add Chicken, figs and brandy, orange juice and stock paste and cook for 20 minutes at 100deg on Reverse Soft Speed.
Add salt and pepper to taste. If all chicken is cooked then place in a Thermoserver to rest otherwise cook for a further 5 minutes.
