Tonight was my first attempt at homemade fettuccine and I am loving it!! Although the pasta is awesome, it still is just a carrier for the sauce and tonight's sauce was a winner. I made the sauce first then placed it into the Thermoserver to keep hot while I boiled the pasta as it only takes about 3 minutes to be cooked perfectly. It's times like this that you realise the value of having a Thermoserver! I served this with some giant herb and lemon croutons (recipe is within this post). Enjoy. Eb x
- 1 onion peeled and halved
- 1 large garlic clove
- 400g bacon diced
- 2 rosemary sprigs leaves only
- 100g vodka
- 400g tin tomato
- 60g tomato paste
- 50g vegetable stock paste (or chicken stock paste)
- 100g water
- 50-100g cream
Add onion, garlic and rosemary to the bowl and chop on Speed 7 for 5 seconds. Add 20g oil and bacon and cook for 7 minutes at Varoma Reverse Speed 1.
Add vodka and cook with MC off for 2 minutes at Varoma Reverse Speed 1.
Add remaining ingredients except cream and cook for 15 minutes at 100deg Reverse Speed 1. In the last 5 minutes add the cream.
Once sauce is cooked place into your Thermoserver while you cook the pasta. I made fresh pasta (recipe in the EDC) and it was divine.
To make giant crunchy croutons, add olive oil, squeeze of lemon juice and fresh herbs to the bowl and blitz. Place into a separate bowl and use some torn day old bread to soak up the oil and herbs. Place into a hot oven (180deg) for approx. 10-15 minutes or until crunchy.
