Pumpkin and Pinenut Ravioli

For my recent birthday I received a pasta maker.  I had held off making my own pasta only because I knew I would love it and therefore it would become another thing I had to make from scratch everytime.  I was right!!!  This is my first ever effort ably assisted by my 12 year old daughter.  I think we did a fantastic job too.  I used the EDC pasta recipe and was thrilled with how it came out.  So if you haven't tried it yet you simply must!!!  Please forgive the photo in this post, I had no intention of actually sharing the recipe as it was a first attempt and wasn't expecting such a good result.  I plan of coming up with plenty of other combinations!!  Eb x

Filling (from memory!)

  • 200g roasted pumpkin
  • handful spinach
  • 200g ricotta
  • 50g grated parmesan
  • 1 egg
  • salt and pepper
  • 50g toasted pinenuts

Add pumpkin, spinach, egg, ricotta and cheese into the bowl and blitz on Speed 6 for approx 20 seconds.  Add seasoning and pinenuts and stir with spatula.

Served with a creamy tomato and bacon sauce.
