I had leftover ganache in my fridge which rarely happens!! Decided to incorporate it into a cookie and the result is this winner. Delicious whilst still warm. Enjoy. Eb x
- 70g brown sugar
- 70g caster sugar
- 90g butter (chopped)
- Heaped tsp vanilla paste
- 1 egg
- 200g plain flour
- Pinch salt
- ½ tsp baking powder
- Leftover ganache (if such a thing exists!)
Add sugars and butter to the bowl and cream on Speed 5 for 15 seconds. Add vanilla and egg and mix on Speed 4 for 10 seconds.
Add flour, salt and baking powder and mix on Speed 5 until well combined.
Wrap in glad wrap and place in fridge or freezer to cool down (don’t let it get too hard). Roll out between 2 sheets of baking paper. Gently spread ganache over the top then roll into a log.
Cut into pieces and roll into a ball. Place on lined baking tray and gently press down with a fork. Cook at 150deg for approx. 12-15 minutes or until golden.
