Creamy Beetroot Hummus

  • 1 garlic clove
  • Handful fresh parsley
  • 1 tin of chickpeas, rinsed and drained
  • 100g cream cheese
  • 1 beetroot peeled and diced
  • Juice of a lemon
  • 20g oil
  • Salt and pepper to taste

Add garlic and parsley to the bowl and blitz on Speed 7 for 3 seconds.  Add remaining ingredients and blitz on Speed 7 until desired consistency is reached.
