Do you own a Thermomix? Are you making your own coconut milk/cream? If not WHY NOT!!!! This is one of the things I absolutely LOVE about my TMX. I am a lover of curries so I was always buying tins of coconut milk and cream thinking it was all ok but I have learnt that store bought is BAD!! There are a lot of reasons for this from the tins they are stored in to some of those cans having very little actual coconut in them. So for me its homemade only because its easy, tastier and you know its made from actual coconut!! CLICK HERE to read more about the dangers of canned coconut milk.
I mainly use it in curries but I also LOVE using it in custard. Try making a lemon or chocolate custard using coconut milk and you will never turn back. So here is how I make mine.
- 150g shredded coconut
- 1000g water
Add to the bowl and cook for 20 minutes at 100deg Speed 4. Blitz by slowing taking the dial up to Speed 8 for 1 minute. Strain through a sieve. Done! If you pour into a container and put in the fridge the milk and cream will separate. Personally I never separate it. This will give you around 500-550g of mixed coconut milk/cream. You can keep in the fridge for a couple of days or freeze it.
