Caramel, Coconut and Marshmallow Slice

I haven't made this marshmallow for a number of years, mainly because the last time I did I got a cramp in my arm from holding the beaters and I had marshmallow splatter all over my kitchen.  I knew the Thermomix would make it a breeze and no mess!  I used a caramel sauce in this one just because I had it on hand but I have done it with strawberry jam or lemon curd and it is equally yummo!  Eb x

Caramel

  •  150g brown sugar
  • 270g sweet condensed milk
  • 40g butter
  • 60g golden syrup

Place all ingredients in the bowl and cook for 10 minutes at 100 deg on Speed 2.  SET ASIDE

Base

  • 150g self-raising flour
  • 60g shredded coconut
  • 60g brown sugar
  • 130g butter (chopped)

Preheat oven to 180deg.  Place butter in the bowl and melt for 3 minutes at 50deg on Speed 1.5.  Add remaining ingredients and mix on Speed 4 for 5 seconds.  Press into a lined slice tin and bake for about 10 minutes or until golden.  Spread caramel on top (carefully) and bake for a further 5 minutes.  Take out and cool.

Marshmallow

  •  1 tbsp gelatine
  • ¼ cup cold water
  • Plus ½ cup water
  • 200g caster sugar
  • ½ tsp vanilla bean paste
  • 1 tsp lemon juice

Place gelatine in ¼ cup water and using a fork mix well.  Add ½ cup water and sugar to the bowl and cook for 3 minutes at 70deg on Speed 2 until all the sugar has dissolved.  Add gelatine and water mix and cook for 2 minutes at 70deg on Speed 2 or until the gelatine has dissolved.  Cook for a further 2 minutes at Varoma Speed 3.

Set aside to cool to at least 50 deg then insert the butterfly and add vanilla and lemon. Whip for 15-20 minutes on Speed 4 (put the basket on top) or until you have a thick consistency.  Pour on top of caramel and then pop in the fridge to set.
