- 200g dried pitted dates
- 200g dried apricots
- 130g raw almonds
- 200g of mixed sultanas, cranberries and blueberries
- ¼ cup plain flour
- 150g butter chopped
- 120g maple syrup
- 1 egg
- 200g dark chocolate
- 30g coconut oil
Preheat oven to 170deg and line a slice tray.
Add almonds to the bowl and chop on Speed 6 for 3 seconds. SET ASIDE
Add dates and apricots to the bowl and chop on Speed 6 for 5 seconds. Add to almonds along with sultanas, cranberries and blueberries. Add flour to fruit and toss to coat.
Add butter and maple syrup to bowl and melt for 4 minutes at 70deg Speed 1.5. Allow to cool then add egg with blades on Speed 3 for 10 seconds.
Add the fruit mix to the bowl and mix for 10 seconds on Reverse Speed 2.
Spread the mix into the tray and bake for approx. 30 minutes.
Add chocolate to a clean bowl and chop on Speed 8 for 5 seconds. Add oil and melt for 3 minutes at 50deg Speed 2. Pour over the top of the slice and put into the fridge to set.
