Puffy Chicken Florentines

  • 250g left over BBQ chicken
  • 50g parmesan cheese
  • 50g cheddar cheese
  • 100g cream cheese
  • 40g semi sundried tomatoes
  • 75g frozen spinach
  • 50g cream
  • Puff pastry
  • Egg wash

 

Place parmesan and cheddar cheeses in TMX and grate speed 7 for 6 seconds, set aside.

Place BBQ chicken in TMX and shred 3 seconds speed 5,  Remove and add to cheeses.

Add cream cheese, cream, tomatoes and spinach to TMX bowl and blitz for 10 seconds speed 6.  Add cheese and chicken back to bowl and mix for 5 seconds reverse speed 3.  Scrape down sides and mix again taking care not to over process into a paste.

Slice puff pastry into 4 even triangles.  Spoon mixture onto puff pastry triangle, fold over and seal edges.  Makes 12.  Brush with egg wash and bake in a 180 degree oven until puffy and golden.
