- 230g butter chopped
- 75g caster sugar
- 210g plain flour
- 50g SR Flour
- 20g shredded coconut
- Strawberry Jam
- ½ pack marshmallows
- 200g dark chocolate
- 15g coconut oil
Preheat oven to 160deg and line a slice tray.
Add butter and sugar into the bowl and cream together on Speed 5 for 20 seconds.
Add flours and coconut and mix on Speed 5 for 30 seconds (scrape half way through if necessary).
Push into a slice tin and bake for 20 minutes or until golden.
Spread 3 heaped spoonfuls of jam over the base and put halved marshmallows over the top. Return to the oven for a further 5 minutes.
Add chocolate and coconut oil to the bowl and melt for 3 minutes at 50deg on Speed 2. Pour over the top then put into the fridge to set.
