I am a real fan of ginger in both my savoury cooking and sweet baking (always reminds me of my Grandma who I miss dearly). This is like a shortbread base with a hint of ginger topped with a lovely ginger icing. Yum. Eb x
- 250g butter chopped
- 150g caster sugar
- 150g plain flour
- 150g self raising flour
- 2 tsp ground ginger
Preheat oven to 180deg and line a slice tray.
Add butter and sugar into the bowl and cream together on Speed 5 for 20 seconds.
Add remaining ingredients and mix on Speed 5 for 10 seconds. Scrape down sides and repeat. Push into the slice tray.
Bake for 20-25 minutes.
- 70g butter
- 50g golden syrup
- 4 tsp ginger
- 250g icing sugar
Add butter, syrup and ginger to bowl and melt for 3 minutes at 60 deg on Speed 3. Add icing sugar and mix on Speed 4 for 10-20 seconds. Add water if you need to make the mix runnier. Ice on top of cooled slice.
