Spinach and Mushroom Rigatoni

Beautiful tasty meatless meal.  Loved the flavours in this! Bek x

  • 1 clove garlic
  • ½ brown onion
  • 1 red chilli
  • 40g semi sundried tomatoes
  • 250g sliced mushrooms
  • 2 cups baby spinach leaves
  • 100g tomato paste
  • 150g  EDC capsicum and cashew dip
  • 30g  Worcestershire sauce (optional - leave out for a vegetarian)
  • 200g cream
  • 100g  water
  • 30g olive oil
  • Good pinch dried oregano
  • Salt and pepper to taste
  • Cooked Rigatoni pasta
  • Parmesan cheese/parsley to garnish

Grate parmesan Speed 7 for 5 seconds and SET ASIDE.

Add garlic, chilli (seeds removed), sundried tomatoes and onion to TMX bowl and chop on Speed 7 for 3 seconds, scrape down sides and chop again.

Add olive oil and sauté for 5 minutes at 100 degrees on Speed 1

Add tomato paste, EDC dip, Worcestershire sauce, cream, water, oregano, salt and pepper and cook for 15 minutes at 90 degrees on Speed 2

Add mushrooms and cook a further 10 minutes at 90 degrees on Reverse Speed 1

Add to hot cooked pasta with spinach leaves and serve garnished with parsley and grated parmesan cheese
