- 160g butter
- 180g caster sugar
- 80g brown sugar
- 2 eggs
- 1 heaped tsp vanilla paste
- 300g Self Raising Flour
- 200g white choc bits
- 90g flaked almonds
Line a lamington tray with baking paper and set oven to 160deg.
Add butter and sugars to the bowl and melt for 4.5 minutes at 80 deg Speed 3. SET ASIDE to cool. Clean bowl
Insert butterfly and add eggs and vanilla, mix on Speed 4 for 1 minute. Remove butterfly and add flour, almonds, chocolate and butter mixture.
Set dial to closed lid and mix on Interval for 30 seconds to 1 minute. Until well combined.
Pour into lamington tray and spread the mix evenly. Bake for 30-35 minutes or until a skewer comes out clean.
When cool, drizzle with dark chocolate and sprinkle with extra almonds.
