Ganache Icecream and The King of Cookies and Cream Icecream

I am actually not a huge fan of icecream but I have one daughter who is addicted and another who would never say no!  When I showed my eldest daughter the ganache icecream she nearly trampled everything in her way to get to it and with one mouthful was hooked - and she is not my addicted one but chocolate is definitely her weakness.  I tried both of these and I have to say I LOVE them.  If you wanting to keep the calories lower in your icecream you can alter the cream to milk ratio.  I have often done 200g cream to 300g skim milk and only put in 100g (or less) sugar but I do find you get more of a crystallised finish which just needs extra whipping.  The ganache icecream was so creamy and smooth it barely needed a second whipping. YUM!!  For the Cookies and Cream I used my The Cookie cookie because I had some leftover (not sure how that happened!) but you could use whatever you want - it just won't be as good ;)  Eb x

Print these recipes

Ganache Icecream

  • 300g whipping cream
  • 200g low fat milk
  • 200g block of dark chocolate (broken into pieces)
  • 100g sugar
  • 2 egg yolks
  • Pinch salt
  • 25g cacao or cocoa

Add all ingredients to the bowl and cook for 7 minutes at 80deg Speed 3. 

Pour into a tin and place in freezer until almost set.

Return to the thermomix and blend on Speed 4 for approximately 10-20 seconds.  I found this icecream to be very creamy and didn’t need much whipping second time round.

The King of Cookies and Cream Icecream

  • 300g whipping cream
  • 200g low fat milk
  • 100g malted milk powder
  • 1tsp vanilla essence
  • 120g sugar
  • 2 egg yolks
  • Pinch salt
  • 3-4 THE COOKIE chopped (or your preferred chocolate biscuit

Add all ingredients (except The Cookie) to the bowl and cook for 7 minutes at 80deg Speed 3. 

Pour into a tin and place in freezer until almost set.

Return to the thermomix and blend on Speed 8 for approximately 10-20 seconds.  Add in your cookie and mix on Speed 4 for 5 seconds.
