Potato Topped Chicken Meatloaf

Chicken and potato!  Marriage made in heaven.  Enjoy this easy family winner!  Bek :)

  • 500g Chicken mince
  • 2 slices stale bread
  • 3 rashers streaky bacon
  • ½ bunch parsley
  • 1 small onion
  • 1 egg
  • 150g cheddar cheese cubed
  • 50g parmesan cheese cubed
  • Paprika
  • Mashed potato


Place parmesan cheese in TMX and grate speed 7 for 6 seconds, set aside.

Place cheddar cheese, bread, bacon, onion and parsley into TMX bowl and blitz 5 seconds speed 6.  Scrape down and blitz again if not all chopped.

Add chicken mince, egg and crumb mixture to large bowl and mix with hands.  Put into a non-stick loaf tin and bake for 20 minutes at 180 degrees.  After 20 minutes, remove from oven and top with mashed potato, grated parmesan and sprinkle with a little paprika.  Put back in the oven and cook for a further 35 minutes at 180 degrees.  Allow to sit for 10 minutes before slicing.
