These are so delicious and easy. They make a great snack or even hors d'oeuvers! A great way to use up left over BBQ chicken - Bek :)
- Left over BBQ chicken – also could use leftover corned beef
- 1 small tin corn
- 100g cheese
- 130g S/R flour
- 2 eggs
- 80g milk
- 1tsp TMX vege stock concentrate
- Oil for frying
Place cheese in TMX and grate speed 7 for 6 seconds, set aside.
Place chicken in TMX bowl and shred speed 5 for 5 seconds
Add cheese back to bowl with remainder of ingredients and mix reverse speed 4 for 15-20 seconds until a thick batter consistency.
Put oil in fry pan and put tablespoon dollops of batter into fry pan. With a wet teaspoon, flatten out batter. When brown, flip over and cook other side. You will need to wet teaspoon for each fritter to avoid batter sticking to back of spoon. This batter will be a lot thicker than a pikelet batter.
