- 130g butter
- 90g caster sugar
- 1 egg
- 100g golden syrup
- 220g plain flour
- ½ tsp salt
- ¾ tsp bicarb
- 2 tsp ground ginger
- ½ tsp cinnamon
- ¼ tsp ground cloves
- 100g boiling water
- Icing sugar to dust
Preheat oven to 160deg and line a slice pan.
Add flour, salt, spices and bicarb to bowl and mix on Speed 5 for 5 seconds. SET ASIDE
Add butter and sugars to bowl and cream on Speed 5 for 20 seconds. Scrape down the sides.
Add syrup and egg and mix on Speed 5 for 10 seconds.
Add flour to the bowl and with the blades on Speed 4, pour the boiling water onto the lid (MC in place). Continue mixing for 30 seconds.
Pour into the tin and bake for 20-25 minutes. Dust with icing sugar when cooled.
