A basic cookie recipe but with a little surprise hidden inside. I used chocolate melts, dark and white, but I'm thinking you could use jam also. Eb x
- 100g butter
- 50g brown sugar
- 50g caster sugar
- 1 tsp vanilla paste
- 1 egg
- 220g plain flour
- Pinch salt
- ½ tsp baking powder
- Chocolate melts
Add flour, salt and baking powder to bowl and mix on Speed 5 for 5 seconds. SET ASIDE
Add butter and sugars to bowl and cream on Speed 5 for 20 seconds. Scrape down the sides.
Add vanilla and egg and mix on Speed 4 for 10 seconds.
Add flour set to Closed Lid and Interval for 30 seconds.
Use about 1 heaped teaspoon per cookie, place 2 chocolate melts in the centre and wrap the dough around it. Push into a mini muffin tin.
Bake at 170deg for 10-15 minutes or until golden.
