I had a recipe laying around for an apricot cake but it looked a bit dull so instead I decided to make my own creation and this was the end result. I am loving using quinoa in all forms of cooking and in a cake it adds a great moisture to it. This was a delicious cake perfect for morning tea or served warm with icecream. Eb x
- 150g dried apricots
- 80g water
- 100g coconut oil
- 80g caster sugar
- 2 eggs
- 1 tsp vanilla essence/paste
- 250g Self Raising Flour
- 100g shredded coconut
- 140g cooked quinoa
- 80g low fat greek yoghurt
Preheat oven to 160deg and line a slice tray.
Add coconut and flour to bowl and mix on Speed 7 for 5 seconds. SET ASIDE
Add apricots to the bowl and chop on Speed 8 for 5 seconds. Add water and cook for 2 minutes at 80deg on Speed 2. SET ASIDE
Without cleaning the bowl, add coconut oil (its ok if the bowl is still warm) and sugar and mix on Speed 3 for 5 seconds.
Add vanilla then with the blades on speed 4 add eggs one at a time and continue to mix until 15 seconds.
Add flour, quinoa and yoghurt and mix on Speed 4 for 10 seconds.
Pour into tray and spread to the edges. Spoon the apricot mix on top and using a knife handle, swirl the apricot into the cake mix.
Bake for approximately 20-25 minutes.
