Date Fudge Cake

Oh my golly goodness this was completely lush!  I went into a cooking frenzy last night and made a couple of cake/slices.  My slice needs tweaking :( but this is perfect just the way it is.  This came into work with me to try out on my taste testers and all of them agreed it was amazing.  It's my new favourite thing to bake and devour.  The nuts are optional so if you are allergic just leave them out but they do add a beautiful texture to the cake.  And don't let the dates put you off, you will never know they are in there.  Eb x

  • 110g butter
  • 130g brown sugar
  • 20g cacao or cocoa powder
  • 60g golden syrup
  • 1 egg
  • 140g self raising flour
  • 100g pitted dates
  • 100g dark chocolate
  • 60g roasted macadamia nuts

For icing.

  • 100g dark chocolate
  • 50g sour cream

Prepare a 20cm square cake tray with baking paper and preheat oven to 160deg.

Place flour, dates, chocolate and nuts in bowl and chop on Speed 7 for 5 seconds.  SET ASIDE.

Add butter, sugar, cacao and golden syrup to bowl and melt for 3 minutes at 60deg on Speed 2.  Scrape down the sides.  Allow the bowl to cool down to 37deg.

Add flour and egg and mix on Speed 2 for 20 seconds.  Pour into tin and bake for 20-30 minutes (until it comes away from side of tin).  You may need to cook for longer, my oven cooks at a high temp.  Allow to cool in tin.

Add another 100g dark chocolate to bowl and grate on Speed 7 for 3 seconds.  Melt for 2 minutes at 50deg Speed 2.  Add 50g sour cream and mix on Speed 4 for 10 seconds.  Scrape and repeat.  Spread over the top and add extra chopped nuts (optional).
