Pear Pancakes

This comes from an old Jamie Oliver recipe that I always use.  By adding the pear the pancakes are always moist and have a bit of extra natural fibre in them :) I served mine up with bananas, low fat greek yoghurt, honey and some toasted macadamias which makes this a healthy breakfast but will make you believe you are being naughty!   • 1/2 large pear (or 1 small one) core removed
  • 150g self raising flour
  • pinch salt
  • 200g milk
  • 1 egg

Add pear to bowl and chop on Speed 5 for 5 seconds.  Scrape down sides and repeat.  You are going for a grated result, not a juiced pear.

Insert butterfly and add remaining ingredients.  Mix on Speed 4 for 30-40 seconds or until well blended.

Fry in a little olive oil.
