When life gives you black bananas .... make cake! I had so many bananas that needed using up (and my freezer already has heaps in it) so I was looking for some different banana cake recipes. I found this one on The Slow Roasted Italian site. I actually didn't have any rum to use but instead used whiskey and it still worked a treat. I topped mine with a basic chocolate icing to make it more kid friendly. Eb x
- 90g butter chopped
- 120g brown sugar
- 2 eggs
- 1 tbsp vanilla extract
- 2 tbsp rum
- 3 bananas
- 300g Self Raising Flour
- Pinch salt
Add butter and sugar to the bowl and cream on Speed 5 for 10 seconds.
Add eggs and mix on Speed 4 for 5 seconds.
Add vanilla and rum and mix on Speed 4 for 5 seconds.
Add bananas and mix on Speed 5 for 5 seconds.
Add flour and salt and mix on Speed 4 for 10 seconds.
Pour into a cake tin and bake at 150deg for 20-30 minutes.
Ice with your preferred mix.
