Anzac Cake

Change it up a bit on Anzac day with this yummy easy cake.   Bek x

  • 125g Butter
  • 75g Golden Syrup
  • 40g desiccated Coconut
  • 55g caster sugar
  • 260g SR flour
  • 1tsp baking powder
  • 210g milk

Put butter and golden syrup in TMX bowl and cook for 7 minutes 100 degrees speed 3

Add remainder of ingredients and mix 30 seconds speed 4

Pour into lined cake tin and bake for 20 minutes at 180 degrees, remove from tin and allow to cool.

Golden Syrup Icing

  • 30g Golden syrup
  • 150g icing sugar
  • 80g soft butter
  • 1 tbsp milk

Insert butterfly and add all ingredients.  Whip speed 4 for 1 minute until fluffy and spread over cooled cake.
