- 300g plain flour
- 70g icing sugar
- 140g butter
Place flour and sugar in bowl and mix on Speed 5 for 5 seconds.
Add butter and mix on Speed 5 for 30seconds. Scrape down sides and repeat. Mix will look like bread crumbs but when squeeze should hold together.
Push into a lined slice tin. Use a metal spoon to push down and even. If you have a second slice tin, lay some baking paper over the top of the slice and use your second tin to push down and even the top.
Bake at 160deg for 15 minutes or until light golden.
- 120g lemon/lime juice (use one or a mix)
- Zest of 1 lemon or lime
- 50g plain flour
- 300g caster sugar
- 6 eggs
Add all ingredients to the bowl and mix on Speed 4 for 20 seconds. Pour over the base and cook for 15 minutes or until the top has set.
Dust with icing sugar.
