Italian Meatloaf

After a battle of the meatloafs on Facebook we had a clear winner.  Bek's Italian Meatloaf was the peoples choice so here is the recipe as promised.  Thanks to everyone who played along.  Eb x

  • 500g beef mince
  • 100g pepperoni sausage
  • 2 cloves garlic
  • Half bunch Italian parsley
  • 1 medium brown onion peeled and halved
  • 3 slices bread
  • Pinch of dried oregano
  • 6 semi sundried tomatoes
  • 75g parmesan cheese cut into cubes
  • 1 egg
  • Salt, black pepper
  • 1 sheet puff pastry
  • Sesame seeds (optional)

Place all ingredients except mince, puff pastry, egg and sesame seeds into TMX bowl

Chop 6 seconds speed 7 until fine crumb mix

Add mince and egg and combine reverse speed 5 for 10 seconds until completely combined, you made need to use spatula to help. 

Mould into log shape on top of puff pastry enclosing sides into roll.  Sprinkle with sesame seeds and bake in 180 degree oven for about 45 minutes to 1 hour until brown and puffed.
