Creamy Zucchini, Garlic and Pinenut Pasta

This is perfect for the vegetarians and non-vegetarians in our world!  Tasty, quick and not a titch of meat in site!  Enjoy this one, we sure did.  Bek x

  • 2 garlic cloves
  • 2 zucchinis
  • 1 red chilli
  • 10g olive oil
  • 100g cream (may need 150g depending on size of zucchini)
  • 1 heaped tbsp tomato paste
  • 1 tsp TMX vege stock concentrate
  • ¼ cup toasted pine nuts
  • Cooked spaghetti or pasta of choice
  • Grated parmesan to serve

Add Garlic and chilli (seeds removed) to TMX bowl and blitz 5 seconds on Speed 7

Add olive oil and sauté for 3 minutes at 100 degrees on Speed 1

Add zucchini (now, I prefer to grate this on a traditional grater for my own preference, if you wish to blitz it in TMX then chop into small chunks and blitz 3 seconds speed 6) and sauté a further 3 minutes at 80 degrees on Reverse Speed 1

Add cream, tomato paste, TMX vege stock concentrate and toasted pine nuts and cook for 7 minutes at 100 degrees on Reverse Speed 1

Stir through cooked pasta and garnish with grated parmesan cheese
