Mexican Pork Enchiladas

  • 300g Pork Mince
  • 400g Tinned tomatoes
  • 1 Onion peeled and cut into quarters
  • 2 cloves garlic peeled
  • 10g Olive oil
  • 1 tbsp tomato paste
  • 1tsp ground cumin
  • 1tsp paprika
  • 1tsp ground coriander
  • Dash cayenne pepper
  • 1tbsp Jalapeno’s (jarred variety)
  • 150mls beef stock
  • 8 tortillas
  • Grated cheese
  • Sour cream
  • Sliced green onion tops

Place onion and garlic into TMX bowl.  Chop 5 seconds speed 7

Scrape down sides, add olive oil and sauté 100 degrees 5 minutes speed 1

Add tomatoes, tomato paste, spices, jalapeno’s and beef stock and cook 100 degrees, 30 minutes speed 1

Brown mince in fry pan, when browned, add half the sauce and cook for a further 10 minutes on the stove

When done, spoon mixture into tortillas and roll up, place into a baking dish sprayed lightly with oil

Pour remainder of sauce over tortillas and spread evenly.  Top with grated cheese and bake in a 180 degree oven for 30 minutes

 Top with sour cream and green onion tops.
