Muesli Bars with Yoghurt

These are better than the store bought versions.  I have been looking for a yoghurt icing to finish off a muesli bar so I was a bit excited when I came across this recipe from Half Baked Harvest.  Change the muesli bars to suit your preferred fruit or nuts. Eb x

  • 170g oats
  • 70g almonds
  • 20g chia seeds
  • 30g pepitas
  • 30g sunflower seeds
  • 90g cranberries (or preferred dried fruit)
  • Pinch salt
  • Tsp vanilla paste
  • 110g peanut butter
  • 130g honey
  • 20g coconut oil

Add almonds to bowl and chop on Speed 5 for 3 seconds.  Set Aside.

Add oats, chia, pepita, sunflower seeds, cranberries and salt to almonds.

In TMX bowl add vanilla, oil, peanut butter and honey.  Cook for 2 minutes at 60deg on Speed 2.

Add to oat mix and using a metal spoon, combine well.  Line a baking tray and press muesli into tray.  Note: I used another baking tray to push down on the muesli to really compact it.

Stick into the freezer for 1 hour, remove and slice (I found a pizza cutter works best).  Return to fridge or freezer.

Yoghurt Top

  • 1 tbsp water
  • 1 tsp vanilla paste
  • ½ tsp gelatine
  • 45g greek yoghurt (low fat)
  • 15g honey
  • Pinch of salt
  • 200g icing sugar

Add water, vanilla and gelatine into the MC and using a spoon mix well.  Into the TMX bowl add yoghurt, honey and salt and cook 1.5 minutes on 60deg Speed 1.  Add gelatine with blades on Speed 3 and mix for 10 seconds.  Add icing sugar and mix on Speed 4 for 10 seconds, scrape sides and repeat.Dip the muesli bars in the yoghurt and allow excess to drip off.  Lay on a tray lined with baking paper and leave out to dry.  Once dry store in an airtight container in the fridge.  They will last for a few weeks.
