Toffee Cake

This delicious cake is currently my daughters favourite for morning tea.  It's a great versatile cake that can be made as one big cake or made into mini loaf size or muffins.  Finish it off with a caramel icing, simple buttercream or to minimise the extra calories, a light dust of icing sugar. It can also become a decadent dessert with a caramel sauce and icecream.  The cake itself has no sugar in it, not saying its healthy mind you but if you are trying to keep your sugar intake to a minimum it is a great option.  When I brought the cake into work I asked the boys to decipher what was in the cake, they had no idea it was loaded with dates and you would never know there was no sugar in it.   • 250g pitted dates
  • 1tsp bicarb soda
  • 50g water
  • 180g butter
  • 190g self raising flour
  • 1 tsp vanilla paste
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 3 eggs
  • 100g milk 

Preheat oven to 180deg and prepare a slice or square tin.

Add dates, water and bicarb to the bowl and cook for 2 minutes at 100deg on Speed 2.

Add remaining ingredients and mix on Speed 5 for 15 seconds.  Scrape the sides and repeat if necessary.

Bake for 20-30 minutes (until skewer comes out clean).


  • 50g brown sugar
  • 20g milk
  • 20g maple syrup
  • 30g butter
  • 200g icing sugar

Cook sugar, butter, milk and maple syrup for 8 minutes at 80 deg on Speed 2.

Add icing sugar and mix for 20 seconds on Speed 4.  Set aside to cool before icing cake.
