Best Crispbread

Driving home today from work I was listening to the The 4 Blades podcast (I trust you all do too!) Today they were talking about an awesome carrot dip which sounded amazing so I was eager to try it.  I have been a bit bored of sandwiches at work for lunch so this sounded like something I would love to munch away on.  My initial thought was to buy some Cruskits to try and keep the "carrier" of the dip low fat but I am really trying to avoid processed, store bought products.  To date my crackers made in the Thermomix have been a fail, tasty but painful to make and quickly over burn.  In one last ditch attempt I did a google search and found this one The Best Crispbread Ever and guess what.....WINNER!  It was super easy and the result is delicious, more like a Vita Wheat I guess.  Anyway, bring on lunchtime tomorrow, I'm excited!!  Eb x

  • 50g linseeds
  • 50g pumpkin seeds
  • 50g sunflower seeds
  • 50g sesame seeds
  • 50g rolled oats
  • 170g wholemeal flour
  • 50g olive oil
  • 120g water

Add all ingredients to the bowl and mix on Speed 4 for 15 seconds.

Put half the mixture between 2 pieces of baking paper and roll out to preferred thickness.  Use and pizza knife to cut into squares then place in a 180deg oven for 15-20 minutes.  Keep an eye on it to make sure they don't over burn.  The edges do get browner than the rest.
