A beautiful moist muffin with just a hint of coffee. Yum. I used a Nespresso pod in mine (Kazaar) but you could use instant coffee. Eb x

- 70g butter
- 70g sugar
- 2 eggs
- 280g Self Raising Flour
- Pinch of salt
- ½ cup milk
- ½ cup coffee (1 Nespresso pod)
- 50g choc chips
Preheat oven to 160deg.
Add butter and sugar to bowl and cream on Speed 5 for 10 seconds. Add eggs and mix on Speed 5 for 10 seconds.
Make coffee and add milk to cool it down. Add flour, choc chips, salt and coffee/milk to bowl and mix on Interval for 10seconds.
Spoon into patty pans and bake for 15 minutes.
Once cooled I dusted mine with instant coffee and icing sugar sifted over the top.
