When you want a speedy dinner that the kids will devour, whip up these tuna patties. They are also great made quite a bit smaller and served as a hors d’oeuvre! Bek x
- 3 slices wholemeal bread
- 1/3 bunch parsley
- 1 large tin tuna in oil
- 1 ½ cups cold mashed potato
- 1 egg
Place bread crumbs and parsley in TMX bowl and blitz for 5 seconds speed 7, remove and set aside in shallow dish.
Without cleaning bowl, add tuna flakes, mash and egg and mix reverse speed 4 until combined (about 10 seconds).
When combined take small handfuls and shape into patties and roll in breadcrumb mix. Shallow fry in a little oil until brown.
Serve with tartare sauce or garlic aioli.
