So just as I have sworn off baking until the weekend, along comes a post from Jamie Oliver that I couldn't wait another minute before trying. Seriously brownies made from dates with no flour and no sugar - intrigued! So here is the converted recipe and let me say, personally these are a winner. My kids just tucked into them and had no idea they were chocoblock with dates. Original Jamie Oliver recipe can be found here. Eb x
- 200g dark chocolate
- 1/2 tsp baking powder
- 200g pitted dried dates
- 55g coconut oil
- 3 eggs
- 1 tsp vanilla bean paste
Preheat oven to 160deg and line a square pan.
Add chocolate and baking powder to bowl and blitz on Speed 8 for 5 seconds.
Add dates and blitz on Speed 8 for 5 seconds.
Add eggs, vanilla and oil and mix on Speed 7 for 20 seconds. Check consisitency and repeat if necessary.
Pour into pan and bake for 15-20 minutes being careful not to overcook, there should still be some wobble. Allow to cool and dust with icing sugar.
