A delicious afternoon tea treat which will help use up any buttermilk you have leftover from making butter!! This recipe makes two loaves so a great recipe if you want one for yourself and one to give away. When I made it I used a spoon to marble the cinnamon through but I have included this as a step for the Thermomix because I think it will have a better end result. The cinnamon sugar on top gives it a lovely crust. Eb x
- 450g buttermilk
- 2 eggs
- 90g vegetable oil
- 200g caster sugar
- 600g plain flour
- 2 tsp baking powder
- 1 tsp salt
- 1 tbsp cinnamon
Preheat oven to 160deg and prepare 2 loaf pans.
Add 100g sugar and cinnamon to bowl and mix on Speed 5 for 5 seconds. SET ASIDE.
Add flour, baking powder, remaining sugar and salt and mix on Speed 5 for 5 seconds.
Add eggs, buttermilk and oil and mix on Speed 5 for 20 seconds. Scrape sides and repeat if necessary. Add 2/3 of cinnamon sugar and mix on Speed 2 until it is marbled through the batter. Don’t over mix.
Pour into loaf pans and top with remaining sugar. Bake for 30-45 minutes.
