Carrot Hommus

Just another variation to the hommus we all love.  Tonight I served it with my Lamb Kofta recipe and Piadinas, deliciousness!!  It would great just on its own as a dip though. Eb x

  • 250g carrots roughly chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ red chilli
  • 1-2 garlic cloves
  • 25g olive oil
  • 80g tahini
  • 400g tin chick peas drained and rinsed
  • Juice of 1 lemon
  • Salt and pepper
  • Extra olive oil

Preheat oven to 200deg and line a baking tray.

Add carrots, spices, chilli, garlic and oil to the bowl and chop on Speed 5 for 2 seconds.  Spread over the tray and bake for approx. 10 minutes.  Allow to cool.

Add all ingredients to the bowl and blitz on Speed 6 until desired consistency is reached.  Scrape down the sides after every 5-10 seconds.  Add extra oil or juice to loosen and to flavour.
