Yesterday my family celebrated my Nan Nan's 90th Birthday. It was a sensational day spent with 4 generations of our family to pay tribute to a lady that has given all of us so much. My Nan is very special to me (as is everyone's Nan I suspect) My fondest memories were always the many hours spent ransacking her beautiful garden growing up (still can't believe she let me!) and now taking my girls over for tea, scones and a chat. My Nan was one of many who taught me about good food, her chicken pie recipe is still the best ever, so it was quite fitting that we spent her birthday celebrating over a high tea. So here was my offering! I also whipped up a batch of the No Bake Mini Cheesecakes (because they are so darn easy and delicious!) Everyone seemed to enjoy the Cheese and zucchini Muffins, possibly because I topped them with a secret Relish recipe but either way I am sure you will love them too. Enjoy Eb x
Cheese and Zucchini Muffins
- 200g self raising flour
- 100g parmesan Cheese in cubes
- 100g chopped zucchini
- 1 egg
- 100g milk
- 60g butter
- Extra cheddar cheese grated for top
- Favourite relish or chutney
Preheat oven to 160deg. Spray a mini muffin tin or flat muffin tin.
Add butter to the bowl and melt for 2 minutes at 50deg Speed 2. SET ASIDE.
Add parmesan and flour to the bowl set to Speed 8 for 5 seconds.
Add zucchini and chop Speed 4 for 5 seconds.
Add egg, milk and butter and Knead (Wheat) for 15 seconds.
Place teaspoonfuls in each the tray and top with grated cheddar. Bake for 10-15 minutes, until golden.
To serve top with some relish and garnish with parsley.
Cheese and Proscuitto Balls
- 250g cream cheese
- Heaped tsp sweet chilli sauce
- 50-100g prosciutto
- Handful fresh parsley
- Handful of fresh chives
Add fresh herbs o the bowl and chop on Speed 7 for 5 seconds or until fine. SET ASIDE
Add prosciutto to the bowl and hit Turbo for 1 second.
Add cream cheese and sauce and blend Speed 4 Reverse for 5-10 seconds.
Use 2 teaspoons to shape into balls and drop into herbs. Coat and serve on a good cracker. I served with Best Crispbread.
